Summary

SMG, the leader in privately managed public assembly facilities, has an excellent and immediate opening for the Suite Attendant for SMG/ Stockton Arena. Responsible for working in the Suites for the facility.

Essential Duties and Responsibilities

Maintain a commitment to customer service and guest satisfaction. Perform all guest contact activities such as serving food and beverage, answering guest questions, etc. in a cordial, efficient and professional manner. Ensure that the food and beverage is served while maintaining a consistent presentation and proper temperature. Assist in food, beverage, equipment, china, glass and silverware inventories on a predetermined basis. Maintain a cooperative, team-like attitude in working with supervisors and fellow employees (including other departments). Enforce all sanitation procedures including safety guidelines and OSHA requirements. Organizing equipment for an event as well as cleaning, maintaining, and looking after equipment during and after functions. Make sure all storerooms are clean, organized and secured.

Immediate communication of special requests, guest problems or concerns to, Suite Supervisor. Follow all designated opening and closing procedures to ensure areas are secure and energy efficient. Follows all rules and regulations which apply to the food and beverage operations and to SMG Food and Beverage Division. Ensure the proper handling and cleaning of all equipment, china, glass and silver. Perform any reasonable requests assigned by management for the arenas staffing and performance needs.

Qualifications

  • Verify and set-up all pre-game/event orders
  • Identify suite host and properly introduce yourself
  • Take and place game day food and beverage orders-Set-up and check on game day food and beverage orders and serve guests until the end of the event-Replenish food, beverages, condiments and utensils as needed
  • Maintain standard of orderliness and cleanliness of suite throughout the event
  • Obtain signatures from the host on charges in a timely manner
  • Clear all items from the suite and clean all surfaces and chafing dishes in suite-Reset suite for next function, complete closing functions-Check out with supervisor or manager Qualifications
  • Must have good customer service skills and the ability to develop and enhance guest loyalty
  • Must follow all SMG-SAVOR policies and procedures
  • Must be present for all major events at the Arena Education and/or Experience
  • Must be 21 years or older.

Education and/or Experience

  • Minimum one-year formal experience as Banquet Server for a conference center banquet facility, arena, full service hotel or restaurant operation.

Skills and Abilities

Excellent guest service skills: ability to adhere to Universal Service Standards-Ability to complete required pre-employment sanitation and alcohol service training-Knowledgeable in operating food service equipment, basic food preparatory techniques, sanitation and safety issues-Strong verbal and written communication skills - ability to communicate with staff, plan ahead and to prepare event plans simultaneously-Highly motivated, ability to take initiative, effectively work with others and work in a fast-paced environment

Summary

SMG, the leader in privately managed public assembly facilities, has an excellent and immediate opening for the Suite Runner for SMG/ Stockton Arena. The Suite Runner 1 assists the Suite Attendant in providing Suites guests with a pleasant experience. The Suite Runner 1 is primarily responsible for setting the Suite up with appropriate preordered and complimentary food and beverage items and serving equipment before the guests arrive. Following the event the Suite Runner 1 will clear away any remaining food and equipment restoring the Suite to prevent condition.

The employee must maintain excellent attendance and be available to work events as scheduled per business need.

Essential Duties and Responsibilities

  • Assists the Suite Attendant in serving meals to guests in the suites.
  • Responsible for observing guests to respond to any additional requests and determine when the meal has been completed.
  • Responsible for cleaning up remaining food product and equipment after the guests have left.
  • Responsible for keeping the Suite work areas and equipment clean.
  • Responsible for setting up the Suite with preordered and complimentary food and beverage product and required serving equipment.
  • Maintains sanitation, health and safety standards in work areas.
  • Must show demonstrated ability to meet the company standard for excellent attendance.

Summary

Essential Duties and Responsibilities

  • Maintains accurate accounting of all cash and inventory on assigned concession stand.
  • Maintains safe working conditions and sanitary work area for employees.
  • Plans for daily sales flow based on projections.
  • Plans for peak hour sales and makes change requirements known to the Food and Beverage Manager.
  • Organizes all paperwork for cashier responsibilities:
  • Physical inventory stand sheet
  • Meal sheet and spoilage reports
  • Handles and processes cash slips
  • Verifies the proper item prices to the menu.

Summary

The Porter is responsible for the delivery, maintaining, stocking, cleaning and ensuring that there is a sufficient supply of products in the concession stands. Position requires an individual to have customer service skills, positive attitude, food preparation, assist in preparing location and area for day to day operation, responsible for accurate accounting and all transactions and assist with location inventory controls.

Essential Duties and Responsibilities

  • Maintain safe working conditions and sanitary work area.
  • Follow rules and regulations of SMG Food & Beverage.

  • Monitors stock levels, obtains supplies and equipment as requested by management.

Summary

Responsible for providing high quality customer service during all events, to achieve customer satisfaction and accurate accounting of all transactions and including inventory.

Essential Duties and Responsibilities

  • Sets up and services individual beverage locations.
  • Properly handles cash.
  • Enforces all liquor laws.
  • Verifies and accounts for all liquor inventory.
  • Maintains proper sanitation of work area.
  • Follows proper safety practices in the work area.
  • Provides pleasant and efficient service to customers.
    • Reports to F&B Personnel in appropriate uniform, for assigned location.

Responsible for the purchasing, receiving, rotation and stocking of all concession products on a daily basis. Ensures that all departmental needs and procedures are met.

Essential Duties and Responsibilities

  • Receives and issues food & beverage products to various locations
  • Processes and maintains product transfer procedures and concession purchase orders
  • Responsible for recording month end inventory
  • Rotates stock and checks par levels of concession products
  • Maintains cleanliness and organization in the warehouse & concession stands
  • Directs warehouse runners with concession location opening, setup, closing and breakdown.
  • Under direction from Food & Beverage Manager;
  • Prepares weekly warehouse employee schedules
  • Prepares purchases for all events
  • Prepares product orders for all events
  • First line of contact with all vendors; resolves delivery issues, introduces new products to Food & Beverage Manager
  • Prepares stand & portable stocking sheets for all events; chargeable and non-chargeable inventory items
  • First line of contact to coordinate equipment repairs with engineering and vendors

Directly supervises all warehouse personnel. Carry out supervisory responsibilities in accordance with company's policies and applicable laws. Responsibilities include training employees; planning, assigning and directing work; addressing complaints and resolving problems.

Summary

SMG, the leader in privately managed public assembly facilities, has an excellent and immediate opening for the Concession Cook for SMG/ Stockton Arena. Responsible for working in the kitchen and/or in concessions preparing food items for the facility.

Essential Duties and Responsibilities

  • Maintains organized sanitary workstation at all times.
  • Properly labels and dates food items for storage.
  • Assists in any and all food preparation.
  • Minimizes waste by controlling usage and following preset portioning.
  • Follows approved recipes and production standards.
  • Helps to maintain all Kitchen equipment and its cleanliness.
  • Maintain a clean, safe working environment.
    • Other duties as assigned.

Summary

The Assistant General Manager of Food & Beverage is responsible for directing, coordinating and supervising the Food & Beverage Operations activities within the facility.

Essential Duties and Responsibilities

  • Markets Food & Beverage services to clients and establishes Food and Beverage control.
  • Creates Food & Beverage Sales Projections and Budgets for facility events.
  • Develops Event Work Plans including scheduling and ordering and assigning appropriate duties to subordinates.
  • Establishes Food, Beverage and Operational needs for all Event and/or Non-Event days to ensure Client satisfaction.
  • Maintains Cost and Quality Control Standards.
  • Inspects food service facilities to ensure that equipment and buildings meet requirements of state and local health laws as well as internal regulations.
  • Analyzes information concerning facility operations such as Daily Food Sales, Patron Attendance, and Labor costs to prepare budget and to maintain cost control of facility operations.
  • Inspects and tastes prepared foods to maintain quality standards and sanitation regulations.
  • Adequately determines locations needed for Events and staffs appropriately.
  • Contributes to the growth and profitability of the business.
  • Prepares, completes and distributes financial reports pertaining to the Event in a timely manner.
  • Thoroughly and accurately utilizes applicable SAVOR…systems (POS, Inventory Management, etc.).
  • Builds and maintains strong relationships with Clients, Guests, Sub-Contractors, Non-Profit Organizations as well as internal Clients.
  • Ensures all security, safety and sanitation standards are achieved.

Qualifications

  • Bachelor’s Degree (BA) in Food & Beverage Management or related field preferred or equivalent combination of education and experience
  • 5+ years of Food & Beverage Management experience in a high-volume Concessions and Premium Service environment in a Sports & Entertainment venue of significant size and scope
  • Must have experience in Inventory Distribution and Controls
  • Must have the ability to manage in a fast-paced, diverse environment with focus on Client and Guest Services, entrepreneurship and building & growing a strong business is essential
  • Must possess exceptional interpersonal skills and have experience managing Client and Non-Profit Organization relationships
  • Works independently, exercising sound business judgment and initiative
  • Professional presentation, appearance and work ethic
  • Proven computers skills including Microsoft Office and POS systems. Experience with Quest a plus
  • Requires ability to work flexible hours, including nights, weekends and holidays, in addition to normal business hours

Director of Catering - SMG- Premier Food Services - Del Mar Fair Grounds (San Diego, CA)

Summary

This position is responsible for all Catering and Dining services generating approximately $7M in annual revenues. This senior position is also responsible for supervising all Catering, Banquet and Restaurant Managers.

Essential Duties and Responsibilities

  • Overall success of events and Catering operations.
  • Develop and maintain a local customer base.
  • Hire, train and supervise Catering Sales staff, Managers and FOH staff.
  • Produce contracts and Catering Event Orders for each event.
  • Develop proposals for potential clients and follow through on pending bookings.
  • Entertain prospective clients of the facilities.
  • Maintains an active role in local hospitality community and professional associations.
  • Attend in-house event-related meetings and relays immediate changes with other departments.
  • Plan, organize and direct various personnel and activities necessary to establish a safe and efficient environment.
  • Coordinates with the unit’s Safety Officer training programs for regular and part-time employees to increase awareness of safety issues, policies and procedures.
  • Schedule event staff for day-to-day operations and special events. Adjust and update work schedules to reflect cost efficiency and building activity.
  • Conducts reviews, coaching sessions and disciplinary actions in a professional and timely manner. Provides feedback and support to employees which further enhances their development.
  • Teaches and adheres to SMG’s philosophy, culture and commitment to quality food and service standards.
  • Assist with budget preparation and track budget allocation throughout the year.
  • Establish and maintain effective working relationships with police, fire, EMS and other security personnel and/or safety organizations.
  • Maintain records and compile reports for management on a periodic basis.
  • Handle complaints, disturbances or related problems with the public, staff or promoters.
  • Investigate, report and provide follow-up on incidents including damage or injury to the facility or individuals.
  • Gain control over unusual circumstances caused by fire, storms, riots and other emergencies.
  • Train event staff, and other personnel in protective procedures, fire safety emergency procedures.
  • Meet and/or exceed projections, schedules and timelines.
  • Other duties as assigned.

Financial Management and Analysis:

  • Prices all menu and Catering items, specifying portion and prep quantities while adhering to food and sustainability guidelines.
  • Maintains and monitors Events and Catering payroll in conjunction with business forecasts and budgets.
  • Ensure that labor meets budgetary goals each week in all operations by establishing clear labor objectives and processes.
  • Ensures that invoices are coded and prices are updated on a weekly basis.
  • Reviews Catering portions and pricing quarterly, suggesting changes and monitoring waste from events.
  • Develop menus and oversee final Catering billing, refunds, rebates, event P&L and Union gratuity allocation.
  • Continues to test and update menu ideas and concepts, staying abreast of new Culinary trends.

Customer Service and Client Relations:

  • Represents SMG in a courteous, efficient and friendly manner in all customer, client and employee interactions.
  • Responds to all comments and complaints within 24 hours and follows up with a written response to the General Manager.
  • Interacts with customers and resolves complaints in a friendly and service orientated manner.
  • Communicates with the Client honestly, accurately and in a timely manner.
